Cazza’s Chicken Casserole

Introducing the casserole that’s not a “casserole”.  I grew up on this & it’s one of my top 10 favs of my mom’s dinners.  It’s healthy, delicious and filling.  Best of all, it’s easy.

I have fond memories of coming home from tennis practice, opening the door and receiving a waft of sauteed bacon, onions and celery.  Instantly putting me in the best mood, I knew we were having my mom’s Chicken Casserole.  Don’t let the name fool you, this is neither baked nor cooked in the namesake’s dishware.  This is a stove top classic that’ll be ready in 1hr (but even better when you let it simmer for 3-4hrs)

Tips

  • 2-4 medium chicken breasts
  • Bacon bits (or crumbled freshly baked bacon)
  • 4 long celery stalks
  • 1/2 large onion
  • 4-6 carrots
  • Frozen peas (I like a lot)
  • 1 can diced tomato
  • 1 tsp chicken bullion powder
  • 1 cup water

Prep your bacon & veggies ahead of time to make the cooking process much smoother and less stressful.  

Don’t have frozen peas?  Canned will do just fine.  Just add them in as the last step.

Instead of bullion powder you can use a small amount of bullion paste.

Step by Step Instructions

Step 1

If you’re cooking your own bacon, start with that then continue with the following steps:

Create your mise in place.  Slice the celery, onions & carrots.  Open your can of tomatoes.  Measure your bullion out.  Set 1 cpu of water aside.

Step 2

Spray pam in a large pan (or add a smidge of olive oil and butter, sorry Mom).  Brown the chicken on both sides lightly and don’t move them, let them brown.  Set aside. 

Step 3

Add the onions & celery in the pan and sweat with the remaining juices.

Stir in bacon bits and bullion.  

Step 4

Place chicken on top and any juices on the resting plate.  Pour tomatoes on top, including the juice.  Add sliced carrots, frozen peas and a cup or more of water.  Put lid on the pan and bring to a boil then turn down to simmer for a couple of hours.  Enjoy with a baked potato (and toppings).
